What type of eggs are healthiest to buy?
90% of US eggs come from caged hens. Not only are caged hens/eggs raised in a space smaller than a sheet of paper, they aren't as nutritious! Studies show pasture raised (naturally roaming free) hens boast almost x2 as much vitamins and x3 omega-3 fats then caged.
What do the food claims actually mean?
The label "Free Ranged" or "Roaming" have no third party inspection and have no guaranteed any specific time for the hens to be outdoors. The label "USDA Organic" hens/eggs have third party inspection, fed organic (antibiotic free) feed however, this doesn't mean they ever go outside! "Pasture Raised" requirement is 1,000 birds per 2.5 acres (108 sq. ft. per bird) and the fields must be rotated. The hens must be outdoors year-round.

DIRECTIONS:
ingredients:
Scramble or hard boil 6 eggs, sliced 4 ways. Divide eggs evenly among 6 grilled tortillas. Sautee spinach in saucepan until wilted. Top egg tacos with spinach, sliced avocado, chopped green onions, cilantro, red pepper, salt and ground pepper to taste. Reboot and Enjoy!
- 6 Gluten Free yellow corn tortillas, grilled
- 6 pasture raised eggs (Vital Farms), hard boiled or scrambled
- 1 ripe avocado, sliced
- 1 large handful fresh spinach, sautéed
- 2 green onions, chopped
- fresh cilantro
- Dash red pepper flakes
- Sea salt and freshly ground black pepper
